Smashed Pickled Cucumber Salad

This salad is best made and eaten fresh on the day. However it is still delicious after a couple if days but becomes more of a pickle then a fresh, vibrant salad. 


1 larger cucumber

200ml rice vinegar

1 pinch of sea salt

1 tsp of something sweet

Crushed garlic or wild garlic capers

1tsp mustard seeds

1tsp coriander seeds

2 dried birdseye chillies

Star anise

Korean chilli powder

Fresh mint or coriander

Roasted sesame oil (optional)
