Pineapple Weed

From a foragers point of view or anyone with a keen eye for the fruits of nature the springtime is always an exciting one. It starts off laboured with the ressurgence of the annually anticipated wild garlic and from then on it is non stop and some what overwhelming. 

 It was so lovely and quite a surpirse to come across some pineapple weed aka wild camomile whilst out on a walk. The sweet pineapple fragrance of this plant never tires and once dried it makes the best cup of camaomile tea you will ever drink! 

 It is extremly easy to identify as the scent is second to none and dosen’t produce petals like a daisy or cultivated camomile would. You will find it in grassy meadows and gateways, local parks and even in the cracks of the pavement at times. 


Although i like to dry the plucked heads and make tea it does make a fantastic syrup to use in cocktails, desserts and even kombucha. You can also infuse it into milk or cream to make pana cotta, brûlées, rice puddings and so on. 

For the best flavour I just pick the heads, no leaves and then dry them at room temperature before storing in a jam jar.
