Candied Lemon and Fig Leaf Oil Cookies

Recipe (makes 12)

100g fig leaf oil

170g soft brown sugar

55g granulated sugar

2 tsp pure vanilla extract

1 large egg

160g plain flour

1 tablespoon cornflour

½ tsp baking powder

½ teaspoon bicarbonate of soda

¾ tsp fine sea salt

1 tbsp candied lemon, chopped

zest of 1 lemon

Method

  1. Preheat the oven to 170°
  2. In a bowl mix together the oil, sugars, vanilla and egg. Mix well until smooth and well combined.
  3. Add the flours, baking powder and bicarb. Mix until a cookie dough starts to form.
  4. Finally add the candied lemon, salt and lemon zest. Mix until all the ingredients are evenly distributed.
  5. Divide the cookie dough into 12 even sized pieces. Roll them into a ball and place them on a lined baking tray giving them enough room to spread.
  6. Cook in the oven for 12 minutes or until the cookies are lightly golden and have a crackly top.
